Roast Chicken Breasts with Garbanzo Beans and Tomatoes

I have another new recipe to share! This dish was fabulous as well as super easy, though I substituted regular ole boneless, skinless chicken breasts. Though I ate the dish as-is, I made some five-minute cous cous for the husband to eat alongside. (He craves those carbs!) Continue

Lookie what I can do!

Upper-body strength has never been my forte, and that has hurt me a little in one of my main hobbies: yoga. But now that my arms have been firmed and toned with medicine balls and fitness bands, I totally surprised myself when I was able to perform a once difficult pose with some ease. I was able to hold it for more than a minute several times and my heart glowed with pride when the teacher complimented my form. Want to know what pose it was? Crow.

Brown rice crispy bars from Alton Brown

I shared some of these around a boot camp and they seemed to be a hit. Tasty and filling, but only about 60 calories per 2-inch square. Enjoy! 3 ounces puffed brown rice, approximately 6 cups 3 tablespoons flax seed oil, plus extra for the pan 1 tablespoon orange blossom honey 7 ounces mini marshmallows, approximately 4 cups 3 ounces toasted slivered almonds, approximately 3/4 cup 1 1/2 ounces coarsely chopped dried cranberries, approximately 1/3 cup 1 1/2 ounces coarsely chopped dried cherries… Continue

Great snack option

After reading my post from the other day, Joe let me try a great protein snack bar from a company he really recommends: the Nutrilite Snack Bar, caramel creme flavor, only 100 calories yet 4g fiber and 5g protein

What's your poison?

So apparently, there is quite a personal taste when it comes to protein powder and protein products in general. I personally like the GNC vanilla powder, mixed with soy milk and a cup of frozen fruit for a grand total of 317 calories and 33 g of protein. The powder dissolves quickly and is not overly sweet, letting the flavor of the fruit dominate for the most part. (I've talked a little about protein powders before oContinue

Yoga for flexibility

We do a lot of strength training at boot camp, so you have to remember to do serious stretching in order to keep your new muscles long and lean and flexible. I haven't been following this advice too well over the last couple of months. I used to be very into yoga -- and have been on and off for almost… Continue

Machine wash cold, dark colors separated

It's Monday. It's still dark outside. It's insanely early. And Elba's workout pants are on inside out. Yep, welcome to Monday morning bootcamp! Even though Elba didn't notice the mistake until we were already at the gym, doing our warm-up squats, you know what? Who cares?! The point is that she still rolled out of bed, threw on her work-out clothes and tennis shoes, and made it to bootcamp at all. Where she has friends who won't make fun of or embarrass her. Well, not too much. We all know tha… Continue

Journaling it right

Keeping track of everything you eat is one of the best ways to lose weight. For one, you're not allowed to delude yourself that doughnut you ate at the morning meeting (because they were free and it was only this once) didn't count. For two, you better realize the impact of your food choices, i.e. do you really need two slices of cheese on your sandwich if it means you'll have to have 25% less dinner?

But keeping track of your food isn't necessarily easy. You wind up with piles of di… Continue

Cold weather means soup

OK, so I know that I have a broad palate when it comes to vegetables: I love them ALL. As a bonus, I can get my husband to eat most of them, too. And two of the vegetables I've fallen in love with are two that many people are unfamiliar with and are perhaps even scared of. I mean fennel and kale.

Don't let lean times make you fat!

According to MSNBC, waistbands tend to expand as the economy contracts, proving wrong that old "tightening the belt" metaphor:

Rising unemployment, higher food prices and dwindling savings may exacerbate the nation’s obesity problContinue

My new jeans

I remember very well when I broke down and bought my size 12 jeans. I was Christmas shopping last year and I saw how tight my size 11s were in all the mirrors. Upset and frustrated, I said, "That's it! I give up. I give in." And I bought a bigger pair. They have quite a bit more room in them now...

A swift -- and necessary -- kick in the pants

Joe often calls to check up on us bootcampers, to see if we have any questions or concerns or suggestions. And I usually welcome such calls and think they show what an attentive and caring trainer we have. But I got a voice mail message tonight from this loving trainer, hoping I felt better and informing me that my regular class would be meeting outdoors tomorrow, that he hoped to see me there. *Sigh.* I am feeling better, but tomorrow is my birthday and I was totally going to wuss out… Continue

Taking care of No. 1

I'm guilty. Not of eating too much chocolate or being lazy with my exercise schedule. At least, not this time. This time, I'm guilty of not taking proper care of myself and am paying a painful price. We had lots and lots of family in town this weekend and we ran all over town, sight saw, ate badly, slept little. I didn't work out and I didn't take my vitamins. And guess what? Within 12 hours of family leaving town, I came down with a horrible flu-like illness, with nausea and a blinding headach… Continue

Fall fundraising time means getting moving

Around this time of year, lots of local organizations take advantage of fall's perfect temperatures to raise money for their various good causes. Whether you're looking to walk, run or bike, there's probably an oppprtunity to do so and support a local charity at the same time coming up soon. Many require a bit of training or fundraising, however, so pencil one into your future in order to prepare.

The joy of salsa

Most sauces and condiments (like alfredo or hollandaise or sour cream or mayonnaise) pack a hefty dollop of fat and calories, which often makes people think that eating healthy has to be bland. But of course that's not so. There are many low-cal, low-fat ways to add flavor to any dish… Continue
